Follow up to report success.
As I said before, neither Recovery Mode into El Capitan nor Internet Recovery Mode into High Sierra worked. Bootable High Sierra USB stick did not work. What DID work was an unexpired El Capitan installer from Apple's website as you mentioned just past 5 minutes. I made a bootable USB of this using DiskMaker X instead of terminal
Since I had probably downloaded the High Sierra installer (which didn't work) from the same Apple page, It appears that my old MacBook Pro simply did not want to go straight to High Sierra. I assume that with El Capitan installed, updated and running, I'll now be able to upgrade to High Sierra, even if I have to get there through Sierra first.
I'm happy I didn't have to go into Terminal. It seems that a fresh unexpired installer accomplishes the same thing as setting back the installer's clock. Thanks for the video and explanation.
Created a bootable High Sierra USB using DiskMaker X. It boots the old MacBook Pro. Installer starts. Then a minute or two in gives the same could not insall message. I suppose the only thing left for me to try is setting the clock back (on the Installer?). How do I do that? And how far back? The same two years you did? A different period because I'm trying to install High Sierra? Thanks.
Amazes me that in 2020 so many others are having the same problem I am with an old mid-2010 MacBook Pro. After wiping it and attempting a clean install of the default El Capitan, I was caught in the same loop. Found your video, and since my intent was to upgrade El Capitan to High Sierra, I followed your instructions for internet recovery mode, found the High Sierra option and proceeded to download.
Looked like it was going to work, but after appearing to complete the installation, it reported the same type of "cannot install" error message as with El Capitan.
Is my ony recourse to go into Terminal and turn back time? I'm not clear or confident about doing that.
Any other suggestions?

I'm having the same issue on a mid 2010 imac – snow leopard, but since I can do the internet recovery, I'll go ahead and download high sierra since that's what i really do want. Is it necessary that I reformat the hard drive (using disk utilities) before downloading high sierra?

Can this install on a Mac osx leopard? I'm getting errors even when directly downloading it from apple.
I accidentally deleted macintosh hd and now the only thing I see is a file icon with a question mark on it.. I can turn it on and off but I cant do anything else.. how the hell do I get outta there?
I erased Macintosh HD w/o backing up and powered off the computer
Then, I get the "?" Folder error
So, I made a new Macintosh HD drive from the Disk Utility
And when I dried to Reinstall Mac OS El Captin, it said: OS X could not be installed on your computer
No package were eligible for install. Contact the software manufacturer for assistance. Quit the installer to reset your computer and try again.

I have a quick question though, where do I get the High Sierra software to download, because I tried everything, reinstalling El Capitan and the error message still comes on, and my computer still won’t work. So I really need some help with that.

Hey man i got an old imac that i only managed to get from 10.5.8 to 10.6 ( early 2008, Intel core 2 duo, 3.06ghz, 4gb memory, 6mb cache, 1.07ghz bus speed), cant find the way to upgrade it (not from apple store of course) even to 10.7, always get ''cant upgrade this version of mac. Also read that 10.7 is the highest i can go, is that true or you have a way to make things work?. I dont mind having latest version and all that, even 10.9 would be awesome for me since i only need proper access to the web and illustration progs to work for now . I would appreciate any info given . Cheers man
Thank you for the date tip. I spent all day stuck in a boot loop and the date change fixed it! El Capitan now installed and my Mac has a new lease of life.

When i try command option r does not work help?!!
Trying to update an old MacBook Air 13” Late 2010 to El Cap. Install OS X starts Preparing install. As I get to restart it gives error code. I restarted and ran the install it got past to restart start. At restart boots to OSX Then said OSX could not instal “No Packages eligible…” what’s not working you kinda skip over that
